When our Master Brewer, Chris Brown, married the love of his life, he brewed a wedding beer. In the great tradition of a brewer letting his or her main squeeze name the wedding beer, his wife Kate settled on the great moniker, “That’s What She Said,” a catchy and appropriate epithet for a sweet and delicious Belgian Trippel. This beer was wildly popular amongst the partygoers and wedding guests, and even further enjoyed in our taproom on draft.

Just like Chris’s love for Kate, we decided to carefully refine the beer by aging it in red wine barrels. This gives some deep, berry-fruit aromas and a slight sharpness to the otherwise sweet, balanced brew. When we barrel-age Chris’s wedding beer, we call it, “Kate The Great”, as an homage our fearless leader’s loving spouse. Each batch of this barrel-aged Trippel is unique and different, taking characteristics from the barrels that we age it in.
