We did it. We hopped on the seltzer train. After many requests for a HCB concoction on draft that was gluten-free, we fermented some dextrose and added fresh lime. The result is the Nothing Fancy Seltzer, which is light and clean drinking, with a citrus back end, and it’s about as fancy as we are.
