We decided to get together with the culinary geniuses at The Obstinate Daughter on Sullivan’s Island to come up with this beer, and it’s called Salad Nicoise. “I don’t want a salad,” you say. “I want a beer.” We know this already, and don’t worry, this salad comes in a pint glass.
When we were putting our heads together to figure out what style of beer we wanted to brew, those food angels from Obstinate Daughter suggested that we combine tangy, tart citrus flavors with creaminess and saltiness, just like the ideal salad. We did that on the brew floor, starting with Belgian Golden Ale. The citrus comes from fresh citrumelo, which is like a cross between a grapefruit and a lemon. Lactose sugar helped us to add a creamy element to the body and smooth out the beer, and we topped it all off with Bull’s Bay Sea Salt. Come have a pint of this delicious flavor explosion, and feel accomplished because you had a salad today!
