Holidays are the time for leftovers. Sometimes it feels like we’re still eating Thanksgiving leftovers as Christmas rolls in, and by the time New Year’s comes, there’s still Mom’s Christmas dinner in the freezer. Leftovers are a good thing and a bad thing, a blessing and a curse: home-cooked goodness at your fingertips that you’re totally tired of by the time you’re halfway through it, but you’ll settle for leftovers, nonetheless.
We’ve got a great idea with our leftover hops from 2017. This isn’t lasagna that you’re reheating for the fifth time. This is a wonderful idea from our creative brew staff: we’re taking a handful of different leftover hop varietals and we’re making our first new IPA of 2018. The build is massive. We’re throwing in some Azacca, TNT, 07270, Idaho 7, Summer, Galaxy and Vic Secret hops to give you florals, fruit notes, a nice piney nose, and a creamy, resin-filled full-bodied IPA at 7.3% ABV. We get the malt profile from Bohemian Pilsner, Munich and Crystal malts, to sweeten up this hop-filled brew, and we skipped the dryhop on this one, too. In its place, we decided to add Idaho 7 and Galaxy hop oil, for a beer that is sure to have a complex nose and palate, with a bitter finish that doesn’t linger or overstay its welcome. This isn’t the first time we’ve referenced Seinfeld in one of our beer names, and it probably isn’t the last, but all of us at the brewhouse have officially deemed this beer “Sponge-worthy.”
