For Brewvival 2015, we brought our pals from Raleigh, NC’s Big Boss Brewing down for this wild collaboration. After all, we don’t brew a great deal of saisons at Holy City, so why not go all out? Black rye plays a big part in this 7.5% ABV farmhouse ale, which was fermented with French Saison yeast and aged on roasted cherries. Lots of roast character from the rye and the fruit, fruity esters from the yeast, and just enough cherry sweetness to balance things out.
For any Francophiles out there scratching their head on the translation, Big Boss + Holy City = Big City…but since we’re humble folk, it’s just a medium-sized town.
